For centuries, spirits have been matured slowly in oak. This is tradition, and has produced beloved classes of alcohols like whiskey and rum. At VI SIX, we approach spirit maturation from a scientific perspective and are not limited by historical precedence: we use fundamentals of science to remix classic barrel aging and create innovative new matured spirits. We keep the romanticism of attentive and patient spirit maturation alive while accelerating the process and breaking into uncharted territory.
